Buffalo Chicken Tenders

Ingredients

For the Chicken Tenders:

1 lb. boneless skinless chicken tenders (or breast sliced into tenders)

1 egg

½ c. finely ground almond flour

1 tbsp. ground flaxseeds

½ tsp. sea salt

¼ tsp. ground black pepper

¼ tsp. onion powder

¼ tsp. garlic powder

¼ tsp. italian seasoning

avocado oil for greasing the basket

For the Buffalo Sauce

¼ cup Frank’s hot sauce, or other brand you like

1 tbsp. ghee

Directions

  1. Preheat your air fryer to 400 degrees.

  2. Pat both sides of the chicken tenders dry with paper towels and season with salt and pepper.

  3. In a small bowl or shallow dish, whisk the egg. 

  4. In a separate shallow container, combine the almond flour, flax seeds, and all seasoning and mix well.

  5. Grease your fryer basket generously with avocado oil to prevent the tenders from sticking.

  6. Dip each tender first into the egg mixture and then into the flour mixture, being sure to coat the entire tender. 

  7. Place each tender into the air fryer in a single layer (you may have to cook them in batches to avoid stacking them).

  8. Cook for 10 minutes, flipping the tenders half way through (or until they have reached an internal temperature of 165 degrees F.

  9. While the tenders cook, make your sauce by heating the hot sauce and ghee in a pot.

  10. Once tenders are done cooking, whisk the sauce so it is fully combined and toss the tenders in it.
